Yeast & Fermentation Scientist

Are you passionate about beer and fermented beverages? Do you want to understand how different yeasts impact the flavours and taste of the final product?

We are now looking for an ambitious scientist to join the Brewing Science, Yeast and Fermentation platform at the Carlsberg Research Laboratory, Copenhagen. We are a team of dedicated scientists focusing on developing tomorrow´s yeast for the brewing industry.

The chosen candidate will contribute to our explorative projects to find innovative and sustainable solutions for our breweries.

What You’ll Be Doing

 

  • You will work in a project team to combine the power of breeding, screening and yeast selection for enhanced properties such as aroma and fermentation characteristics.
  • You will conduct laboratory-scale fermentation trials and select yeasts with desired attributes.
  • You will identify causative mutations translating genotypes to phenotypes.
  • You will use state-of-the-art robotics and targeted genetic approaches to make further improvements of the yeasts.

Please note that all work and experiments use non-GMO technologies.

What We’re Looking For

 

  • PhD or Master´s degree with several years of experience in the field of Brewing or Wine Microbiology, Fermentation, Metabolic Engineering, Yeast Genomics or related fields.
  • Strong background in yeast research preferentially with experience within genomics.
  • Previous experience with fermentation and characterization of conventional/ non-conventional yeasts is an asset.
  • Basic Bioinformatics skills (genotype to phenotype), some programming skills and familiarity with the brewing process and beer chemistry will be advantageous.
  • A hands-on attitude with the willingness to contribute to the practical work part.
  • Ability to work in a team and on team projects at the same time being able to take full ownership of individual tasks.
  • Proactiveness, with curiosity to test the hypothesis in the laboratory.
  • Good time management skills and focus on the project priorities.
  • Fluency in English (written/spoken, as it’s our corporate language.
