Our colleague José Ramos Vivas has won the award FOTCIENCIA 2023 in the Food and Nutrition category with the photograph titled “A ball of parasitic Anisakis worms extracted from fresh fish”.
The description of the photo in José's words is as follows:
The worms of the genus Anisakis They are common parasites of fish such as cod, salmon, hake, whiting, and sardines, among others. These worms adhere to the viscera and flesh of the fish, so if a fish infected by Anisakis Consumed undercooked, it can cause anaphylaxis, a severe immune reaction, and anisakiasis, a disease with symptoms such as abdominal pain, nausea and vomiting. To prevent this infection, it is essential to cook the fish properly or freeze it at very low temperatures for a long enough time to eliminate these parasites. Anisakiasis is an important disease, so we must maintain adequate hygiene when handling and preparing fish.
